About the Blog - Fragments of a Life

This blog will contain things I have written; some of my best photos; and a selection of my favourite recipes. I am truly fortunate to have traveled to and worked in fascinating places, met remarkable people, and seen many of the wonders of planet earth. Friends have urged me to write about these experiences and to publish my photographs. Maybe, one day, these will come together into a book. For now, they will be presented as fragments of a life since I am not yet prepared to "retire" and write. As well, for many years, I have been promising to publish my "cookbook". As I cannot get my act together to edit that all at once, I will start publishing those recipes one by one.

Banana Nut Bread

Everyone needs a standard Banana Bread recipe.  This is a winner from Hawaii.
 

2 cups sifted flour
2½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon  salt
1 cup mashed ripe bananas
½ cup sweet butter
¾ cup white sugar
2 large eggs
2 ounces chopped unsalted macadamia nuts
  • Sift together the flour, baking powder, baking soda and salt. 
  • Mash bananas to a pulp with a fork. 
  • In a medium size bowl in a mixer, at medium speed, cream butter. 
  • Add sugar and beat until light yellow. 
  • Add eggs one at a time and beat until thoroughly blended.
  • With mixer on lowest speed, add 1/3 of sifted ingredients to creamed mixture, then half of the banana pulp, blending well after each addition, and repeat till all ingredients have been incorporated. 
  • Fold in the nuts. 
  • Pour into buttered loaf pan (9 inches x 5 inches) and bake in 350º Fahrenheit (177º Centigrade) oven for 50 minutes. 
  • Let cool in pan.
  • Turn out and slice. Serve warm or cold.
