Everyone needs a standard Banana Bread recipe. This is a winner from Hawaii.
2 cups sifted flour
2½ teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe bananas
½ cup sweet butter
¾ cup white sugar
2 large eggs
2 ounces chopped unsalted macadamia nuts
- Sift together the flour, baking powder, baking soda and salt.
- Mash bananas to a pulp with a fork.
- In a medium size bowl in a mixer, at medium speed, cream butter.
- Add sugar and beat until light yellow.
- Add eggs one at a time and beat until thoroughly blended.
- With mixer on lowest speed, add 1/3 of sifted ingredients to creamed mixture, then half of the banana pulp, blending well after each addition, and repeat till all ingredients have been incorporated.
- Fold in the nuts.
- Pour into buttered loaf pan (9 inches x 5 inches) and bake in 350º Fahrenheit (177º Centigrade) oven for 50 minutes.
- Let cool in pan.
- Turn out and slice. Serve warm or cold.
